It reminds me at octopus... I am not sure if everyone likes this recipe, but maybe you like to try it. Trixilie and I like it 😊

 

Onion Pasta and Plum Currant Sauce

 

Ingredients for 2 people:

 

40g of dried beluga lentils

 

50g of plums

 

60g of black currant

 

4 big violet onions

 

50ml vegetable stock

 

if you like a bit of salt and pepper

 

a bit basil as topping

 

 

 

Preparation:

 

Rinse the lentils thoroughly. In a pot, mix the lentils and 120ml of water (no salt!) and bring it to the boil. Let it simmer at medium heat for 15 minutes, then drain the lentils.

 

Peel the onions. Slice the onions in rings. In another pot, mix the onion rings and 2 tbsp. of stock and bring it to the boil. Let it simmer at medium heat for 5 minutes.

 

Quarter the plums and remove the stones. Cut the plums into small pieces. In a blender, place the plums, currants, lentils and the rest of the stock. Blend it until smooth and season with salt and pepper, if you like.

 

Serve the onion rings and the plum currant sauce on two plats with a bit of basil.
